Susan's Chicken Fried Rice

1 lb. chicken cut into bite size pieces
2 eggs
shredded carrots (as many as you want)
1/2 large onion, diced
4 Tablespoons Soy Sauce (Plus more)
2 cups cooked rice (I cook 3-4)
2 teaspoons "Better Than Bouillon" chicken flavor
2 teaspoons minced garlic
2 Tablespoons Rice Vinegar


  1. Cook rice and set aside
  2. Cook chicken in oil (I use a bit of bacon grease), 1 tsp garlic, and 1 tsp "Better Than Bouillon:
  3. Remove chicken and set aside
  4. Beat 2 eggs with 2 Tablespoons Soy Sauce
  5. Cook egg in leftover oil (may need to add a little more). Remove and put on top of chicken.
  6. Add a little oil, 2 Tablespoons Soy Sauce,  2 Tablespoons Rice Vinegar, 1 tsp. "Better Than Bouillon" and 1 tsp. garlic
  7. Add diced onions and shredded carrots. Cook
  8. Add chicken and eggs back to pan. Heat thru.
  9. Sprinkle 1-2 Tablespoons Soy Sauce on rice and stir.
  10. Combine rice with chicken mixture.
